Monday Meals: Gluten Free Spinach and Feta Quiche with Sweet Potato Crust

Whether you are avoiding gluten or simply looking for a quick and delicious alternative to a pastry crust, the addition of sweet potato to this quiche recipe is a sweet idea. Sweet potatoes are an excellent source of vitamin A, vital for vision, immune function, fertility and gene regulation. High in fiber, sweet potatoes are only distantly related to regular potatoes and they score much lower on the glycemic index. Their nutritional profile is rounded out with plenty of potassium, vitamin C and vitamin B6.
