Monday Meals: Make a Mid-Week Fiesta with Fish Tacos

Fish tacos are the perfect mid-week, pick-me-up meal. Something about assembling your custom plate, choosing from the bright toppings and spicy garnishes, treating yourself to an extra slice of creamy avocado – it feels like a little party. When you chose grilled or baked fish as your star, you get the bonus benefit of a low or healthy fat protein that you can feel good about. The American Heart Association and the USDA both recommend that we eat at least 2 servings of fish a week, particularly oily fish like salmon, fresh tuna (or canned tuna that is labeled high in Omega-3), herring or sardines. Food and Wine shares Chipotle-Rubbed Salmon Tacos to help you meet that goal happily this week.

If you are looking for a recipe with even more zest, check out Half-Baked Harvest‘s Spicy Fish Tacos with Tequila Lime Pickled Pineapple. These quick-marinaded white fish tacos are topped with a fresh herb and garlic chermoula sauce. The star, however is the thinly sliced pineapple, “pickled” in lime juice, jalapeños and a splash of tequila. Even if you leave out the alcohol, the lime soaked pineapple slices are a juicy treat that make this meal special.

If you need a fish taco primer. Or you are looking for a recipe that will please your most fish-skeptical diner, check out Donal Skehan‘s Mexican Fish Taco recipe and video. Loaded with guacamole and finished with a dollop of sour cream, these tacos are a table pleaser.
